Nitrates are a direct source of nitrogen, which is very important for the active growth of plants. Most of them are in young plants. Weather and soil quality are the main factors that determine the need of plants of different cultures for nitrates. For example, the amount of nitrate in vegetables and fruits grown in hot and dry summers is less than in their counterparts grown in rainy cloudy weather.

Each plant has a peculiar weak spot, where the amount of nitrates will always be maximum. This is a stump for cabbage, a peel for melons, potatoes and beets, petioles for greens. The most nitrate fruits, scientists call beets, radishes, lettuce and spinach. On the other side of the scale are tomatoes, eggplant, pepper and garlic, relatively nitrate-free.

Nitrates in the human body turn into nitrosoamines and nitrites, which accumulate in organs and tissues and are capable of causing certain health damage. Therefore, the use of manure as a fertilizer follows, observing a number of rules.
