How to choose a stone for pizza?

Instead of special stones for pizza, you can use the usual red or silicate bricks - they have a suitable porous structure and natural origin, absorb moisture well and evenly distribute it in the oven.

But their shape is not suitable for baking pizza directly on the surface, so they are simply placed on the bottom of the oven.

It is advisable to buy a special stone, which is produced precisely in order to improve the quality of baking. When choosing a stone for pizza, look at its thickness - it should not be too thin, preferably more than two centimeters. The shape can be any - round, rectangular, square, although it is recommended to choose a round stone for pizza.

Pizza stones are made from different materials: it can be granite, terracotta tiles, refractory clay, ceramics, and even burnt red brick. All are equally well suited for making pizza. Make sure that the stone is made of natural material.

Do not forget to check the width of the stone - it should easily enter the oven, so it is advisable to measure its dimensions before buying. The gap between the walls and the stone should be a few centimeters.
